The purpose of freeze drying is to dehydrate food. Here’s the thing: There’s more than one way to dehydrate food. One of the more common processes involves applying heat to evaporate all moisture. However, this form of dehydration actually changes the molecular structure of some foods. Hydrating these same foods often does not work well.
Freeze drying is different. First, you are not using heat to dehydrate the food in question. In effect, you are lowering its temperature to freezing point. A sublimation process is then used to remove the water, which is actually the ice in the frozen product.
Without getting too technical, sublimation is a process that converts solid ice into vaporized gas without forcing the frozen water to become liquid. The result is a method of dehydrating food that has less impact on the food itself. That way, when you rehydrate the food in question, it still looks and tastes just as good.
It melts in your mouth
This brings us to the process of freeze drying candy. One of the most annoying things about candy is that it absorbs moisture from the atmosphere. That’s why candy becomes less attractive over time if you don’t eat it. This is truly a sugar thing. Sugar molecules combine with oxygen molecules and create a nasty mess.
If you put certain types of candy in the refrigerator to keep them longer, you won’t necessarily stop the water-absorbing process. You’re just stalling for time. Continuous exposure to lower temperatures can dry out some types of candy over time, making them less attractive.
Freeze drying is the solution. When you freeze-dry certain types of candies, you can preserve their flavor and texture. Put a piece in your mouth and when you eat it, your saliva basically rehydrates it. You will feel the candy melting in your mouth.
Even hard candies work
You can freeze-dry many different types of candies, including gummies and Skittles. Even hard candies can work. It’s amazing how freeze-dried hard candies melt in your mouth like nothing else. It was a really fun experience to experience. As for the taste, it’s incredible. If we didn’t know better, we’d be led to believe that freeze-dried hard candies offer all kinds of new flavors you can’t taste.
